Slow-Cooker Vegetable Soup


1 onion chopped
2 carrots chopped
2 Courgettes chopped
400gms Curly kale chopped
2 celery stalks chopped
340gms fresh green beans
1 Tin of Tomatoes
2 cloves garlic, minced
2 cans of cannellini or other white beans
1 pint of chicken Stock

Combine onion, carrots, celery, green beans, kale, zucchini, tomatoes, garlic, white beans, broth, salt and pepper in a 6-quart or larger slow cooker.
Cook on High for 4 hours or Low for 6 hours. Blend usig soup blender to desired thickness.
