One Pot Roast Pork with Summer Vegetables

Serves: 4


  1. Heat the Oven to 180 C fan/Gas 6,
  2. Put all the vegetables into a large roasting tin.
  3. Mix the Tomatoe paste and stock pour over the vegetables.
  4. Cover with foil and cook for 30 Min
  5. After 30 min take out and place Pork in the roasting tin between the vegetables.
  6. Season well and return to cook for 20 / 25 min until Golden Brown.
  7. Serve with pan juices drizzled over.
